Organic Recipes: Earth Day Celebration

Earth Day started in 1970 as a national plea to bring more focus to the importance of our environment.  Now, in 2013, it has become a global movement for people of all cultures to come together and celebrate the common goal of sustaining our environment.  Today’s world of fast food and dining out is taking a huge toll on animal and environmental welfare, so in honor of Earth Day this year, substitute a few fast food meals with these delicious, organic recipes for breakfast, lunch and dinner.

Organic Recipes: Banana Bread

 Organic Ingredients:

  • Organic Recipes: Banana Bread1 c white whole wheat flour
  • 1 c whole wheat flour
  • ½ c sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • ½ c unsalted butter, melted
  • 2-3 very ripe bananas
  • Optional: ½ c raisins, coconut, and/or walnuts

Directions: Preheat oven to 350 degrees.  Butter and flour the bottom and sides of a 9x5x3 inch loaf pan.  In a large bowl, mix together the dry ingredients.  In a medium bowl, mix together egg, vanilla, butter and bananas.  Combine the wet ingredients with the dry ingredients.  Pour into the pan and bake for 1 hour or until top is brown.

Organic Recipes: Quinoa Salad

  • 1 cup quinoa
  • 2 cups hot water
  • 2 cucumbers, chopped
  • 2 plum tomatoes, seeded and chopped
  • 1 yellow pepper, seeded and chopped
  • ½ lime
  • 1 handful cilantro, finely chopped
  • 1-2 tbsp olive oil
  • Salt and pepper to taste

Directions: In a medium saucepan, cook the quinoa in hot water for 10-15 minutes, until tender, stirring occasionally.  Allow to cool.  In a bowl, mix together cucumber, tomato, pepper, cilantro, salt and pepper.  Gently toss with the quinoa.  Pour olive oil and squeeze lime over the quinoa.

Organic Recipes: Lemon Roast Chicken

  • 1 whole organic chicken, 7-8 lbs
  • ¼ c butter
  • 2 fresh bay leaves
  • 1 handful fresh oregano leaves
  • 6 garlic cloves, sliced
  • 1 lemon, juice and zest
  • 1 lemon, cut in quarters
  • 2 tbsp sweet paprika
  • 1/3 c white wine
  • 1 c water

Directions: Preheat oven to 400 degrees.  Remove chicken giblets, rinse chicken inside and out, and pat dry.  Sprinkle salt and pepper inside of chicken and place in a roasting pan.  Stuff the cavity with oregano, garlic and lemon.  Rub outside of chicken with butter, pour over lemon juice, and sprinkle with salt, pepper, paprika and lemon zest.  Tie the legs together with string.  Pour wine, water and bay leaves in the pan and roast for 1 ½ hours.
